Soft cookies with jam
Recipe in italian version is this
Soften the butter at room temperature. Boil the eggs by putting them in a saucepan with cold water and boiling them for 09 -10 minutes. Drain and shell them.
Sift the flour with the starch and a pinch of salt. Place it in a bowl or on a pastry board and make a well and in the center place the butter, sugar, egg yolks mashed with a fork and kneed quickly to obtain a homogeneous mixture. Cover with plastic wrap and let it rest for 30 minutes.
Divide the dough into little balls the size of a walnut and place them on a baking sheet lined with parchment paper, then make an indent in the center of each ball about 1/4″ deep. Bake the balls in a hot oven at 180 degrees for 10-12 minutes. With a syringe or spoon fill the holes with sweet jam or nutella, and bake for 10-15 minutes longer. Serve the cookies cool, dusted with powdered sugar.
