My suggestion for today is a first course dish of fish, I think it would be perfect for Christmas  Eve, it is not expensive, quite simple and believe me, most of your guests will ask for seconds. The other evening I had company, but there was little available at the fish market, so Cosimo recommended I prepare it in this way.

  • 600 gr mussels
  • 500 gr squid
  • 300 gr shrimp
  • 4 cherry tomatoes
  • Garlic
  • Onion
  • Basil
  • Parsley
  • Chili pepper
  • White wine

Clean the mussels, scraping the shell and rinsing them well. Place them in a pan with a few tablespoons of olive oil and a clove of garlic. Cover the pan with a lid and cook on high heat so the shells open. Remove the shells, setting aside a few whole mussels for the garnish. Filter the cooking juices. Sauté the onion with some oil in another pan, add the squid, previously cleaned and cut into strips. Cook for a few minutes, add some white wine, allow it to evaporate and add the cherry tomatoes cut into pieces. Add the cooking juices released by the mussels. Cook for a few minutes and once the sauce has thickened slightly, add the mussels, the shrimp, the basil and some fresh chili pepper.

In the meantime, cook the pasta in a stockpot full of boiling salted water. I normally add some of the cooking liquid from the mussels, it makes it tastier. Drain the pasta when ‘al dente’ and add it to the pan with the sauce. Stir well to incorporate and plate the pasta with the whole mussels set aside earlier and sprinkle with chopped parsley.

At this point, the linguini with mussels squid and shrimp are ready to be enjoyed.
